Cilantro Rice

If you've ever been to the restaurant Chipotle then this delicious rice really needs no introduction. If you haven't been to Chipotle then this is an awesome way to switch plain old rice and make it something special. Obviously this recipe is for people who love cilantro (I hear that to some people cilantro tastes like soap, so sad). I served this with my Chili Lime Grilled Salmon but really this goes with so many things, ie: tacos, burritos, dumpings, empanadas etc.
There aren't too many photos for this since it's really just a few steps, it's just a basic rice preperation with a few additions.

Pour 2 cups of rice.

Bring 4 cups of water to a boil over high heat. Once boiling add salt, lime juice, olive oil (or butter), and rice. Stir once and continue to cook over high heat until the level of the water meets the level of the rice. Once you can see the level of the rice cover pot and turn heat down to low.
Cook over low for 20 minutes, make sure NOT to lift the lid and peek. Very important.

Meanwhile, chop some cilantro. You really don't have to measure, just grab a bunch and chop as much as you like. However, if you really wanted to measure I would say once it's chopped it would be about 1/3 of a cup.

After twenty minutes has elapsed, turn off heat, remove the lid and fluff the rice with a fork.
Add chopped cilantro and stir from bottom up.

That's really all there is too it! Serve with whatever you like and enjoy!
Cilantro Rice
2 cups Long grain rice
4 cups water
½ salt
1 tbsp lime juice
1/3 cup chopped cilantro
½ tbsp olive oil or tbsp of butter
Directions:
Add water to large pot and bring to a boil. Once boiling add salt, lime juice and olive oil (or butter if using) then add rice. Stir once and boil uncovered until the level of the water meets the level of the rice. Once you see the level of rice cover pot and turn heat to low. Cook on low for 20 minutes making sure to NOT lift the lid and peek (resist the urge!). Once 20 minutes has passed, remove lid and fluff the rice with a fork. Add chopped cilantro and give the rice 1-2 stirs from the bottom. Remove from heat, eat and enjoy!
